Pork and Spinach Noodle Soup

Ingredients
  

  • 1 pound ground pork
  • 1 tablespoon sugar-free maple syrup
  • ¾ teaspoon sea salt divided and to taste
  • ¼ teaspoon cinnamon
  • 4 cups chicken broth
  • 1 teaspoon fish sauce
  • 8 ounces shirataki noodles rinsed and drained
  • 4 cups baby spinach
  • 4 stalks green onion sliced

Instructions
 

  • Heat a large pot over medium heat. Add the ground pork, sugar-free maple syrup, and half of the sea salt.
  • Break the pork apart with a spoon and cook for about eight minutes, or until fully browned.
  • Stir in the cinnamon, chicken broth, and fish sauce. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  • Taste and add more salt as needed.
  • Place the shirataki noodles and spinach into serving bowls. Ladle the hot broth and pork over each bowl.
  • Top with sliced green onions and serve warm.
